Khura Recipe

Khura is a breakfast made from buckwheat flour from Arunachal Pradesh. I made it with wheat flour and relished it with pickle. Tastes very much like the traditional Mangalorean wheat flour dosa, though this one is made a little bit thick.

Ingredients :

  • 250 gms wheat flour
  • 100 gms maida/ all purpose flour
  • Salt
  • Butter

Method :
Make a batter of the wheat flour and maida. Add salt and mix well. Pour a ladleful on a hot griddle and drizzle with butter. Roast on both sides and serve hot.

Koat Pitha Recipe

Koat pitha, fritters made from mashed ripe bananas, rice flour and jaggery are enjoyed as a snack in Arunachal Pradesh.

Ingredients :

  • 2 ripe elaichi bananas mashed
  • 2 tbsps jaggery syrup
  • A pinch of salt
  • Rice flour enough to bind them
  • Ghee to fry the pitha

Method :
Mix all the above mentioned ingredients, roll them into desired shape. Heat ghee/ clarified butter and deep fry to a rich golden brown.

Methi Dosa Recipe

Methi or fenugreek adds to the taste and aroma when added to the batter, and a pinch of haldi /turmeric enhances it’s colour. Enjoy this dosa with chutney or with pickle dear friends.

Ingredients:

  • 250gms urad dal
  • 600gms rice
  • 1 heaped tbsp methi/fenugreek
  • Salt
  • A large pinch of Haldi/turmeric

Method:
Wash and soak the urad dal, rice and methi for 5 hours. Grind to a fine batter in the wet grinder for half an hour. Remove. Add salt and haldi and ferment for 10-12 hours. Heat a tava/skillet. Pour a ladleful of batter and spread in concentric circles all over it. Drizzle with oil. Roast to a golden yellow. Flip. Roast on the other side too. Serve with chutney or with pickle.

Nylon Dhokla Recipe

The word Nylon precedes dishes made of Poha, idli and Dhokla because of the sheen that the dish imparts after it is done. Enjoy this Nylon Dhokla dear friends.

Ingredients:

  • 1 bowl of urad dal
  • 2 bowls of rice
  • 5tbsps curds
  • A paste of green chillies and ginger as per taste
  • Salt
  • A tsp of Eno fruit salt
  • 1tbsp Oil
  • Chilly powder
  • Pepper

Method :
Wipe the urad dal and rice well. Powder it to a coarse semolina like consistency . Soak it in the curds, salt and water enough to make a dosa like batter of pouring consistency . Allow to ferment for 6 hours. Grease a plate and place it in the steamer which has been kept boiling. Add a tbsp of oil and the green chilly ginger paste into the Dhokla mixture. Stir well. Add the Eno fruit salt, whisk and immediately pour it into the greased plate. Cover and allow to cook for a couple of minutes. Sprinkle chilly powder and pepper powder evenly on the Dhokla and cover and cook for 10 minutes . ( a knife when inserted into the Dhokla should come out clean) Allow to cool. Cut into desired shapes and serve with green chutney or tomato ketchup.

Falafel and Hummus Recipe

One of the most popular of Lebanese dishes, Falafel and Hummus is very filling and delicious too!! .

Ingredients :

Falafel

  • 125 gms of kabuli chana/chick peas
  • 2 onions
  • 2tsp coriander seeds/dhania
  • 1 tsp cumin/ jeera
  • 6 garlic cloves
  • Few pepper corns
  • Chopped coriander leaves or parsley.

Method:
Soak the kabuli chana overnight. Dry grind in the mixer coarsely with the onions, coriander n cumin seeds, pepper, garlic n salt to a coarse consistency. Remove and add the chopped coriander leaves. Mix well, pat into desired shape. Heat oil and deep fry.

Hummus

  • A handful of pressure cooked kabuli chana
  • 2tbsp roasted sesame/ til
  • 3 flakes garlic
  • Olive or peanut oil
  • Pepper powder
  • Paprika or chilly powder
  • Lemon juice
  • Salt

Method
Grind all the above to a smooth paste and garnish with coriander leaves. Serve as a dip with falafel.

Garlicky Peanuts Recipe

Another variation of the traditional salted peanuts is this garlic flavoured one. The crisp garlic cloves are deliciously crunchy.

Ingredients :

  • 250 gms peanuts
  • 15 garlic cloves
  • 1/2 tsp chilly powder
  • Salt

Method :

Heat oil. Fry the peanuts till crisp. Drain and keep aside. Chop some of the garlic cloves and leave some whole. Fry them too, on a slow flame till they are crisp and a deep golden brown. Tip them into the fried peanuts. Sprinkle salt and chilly powder. Mix well. Store when cool.

Seasoned Crispy Peanuts Recipe

Salted peanuts go well as munchies with drinks or even with soft drinks. Sending a variation of the same.

Ingredients :

  • 250gms peanuts
  • 1/2 tsp chilly powder
  • A pea sized piece of hing/asafoetida powdered
  • Salt
  • 3 sprigs curry leaves

Method :

Heat oil. Deep fry peanuts till crisp. Deep fry curry leaves too and tip them onto the peanuts. Sprinkle chilly powder, salt and hing. Mix well. Store in air tight container when cool.

Mango Gozzu Recipe

Mango Gozzu is a tangy, sweet and spicy side dish which is made in every Konkani household in Dakshin Kannada during the mango season. It tastes best when made with the sweet and sour variety of mangoes. An accompaniment with dal and rice, it goes well with rotis too.

Ingredients :

  • 2 ripe mangoes( the sweet and sour variety)
  • 4 green chillies minced
  • Salt
  • Sugar as per taste

Seasoning:

  • 2tsps ghee/clarified butter
  • 1 tsp mustard
  • 2 dry red chillies
  • 2 sprigs curry leaves

Method :
Deskin the mango and extract the pulp adhering to the peel by rubbing the peel in water. Repeat this process three times. Chop the mango and crush it using a masher or your fingers. Do NOT use the mixer to mash it. Crush the chillies with salt. Add the sugar, crushed chilly and salt and mix well. Heat 2 tsps ghee. Add a tsp of mustard and after it splutters add a couple of dry red chillies. Toss and add 2 sprigs curry leaves. Drop the seasoning into the mango gozzu. Mix well.

Mango Milkshake Recipe

Summer, and the season of Alphonso mango. The time to gorge on a variety of mangolicious delights. Here is a milkshake nice and cool dear friends. Enjoy.

Ingredients :

  • 2 glasses of cold milk
  • 1 glass mango pulp
  • Sugar as required
  • Finely chopped mango pieces to garnish

Method :
Blend the milk, mango pulp and sugar in the blender. Pour it into a tall glass and serve chilled garnished with mango pieces.

Mango Smoothie Recipe

Ingredients:

  • 1mango
  • 200ml thick set curd
  • 2tsps sugar

Method :

Deskin the Mango. Chop it into chunks. Blend them along with the yoghurt and sugar. Dilute it with a little water if it is too thick. Serve chilled.
